Here’s a cozy and versatile Baked Oatmeal recipe that’s great for breakfast and can be prepped ahead for the week!

Ingredients:

  • 2 cups old-fashioned rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup brown sugar or maple syrup (adjust to taste)
  • 1 1/2 cups milk (any type: dairy, almond, oat, etc.)
  • 1 large egg (or a flax egg for a vegan option)
  • 1 teaspoon vanilla extract
  • 1/4 cup melted coconut oil or melted butter
  • 1 cup mixed berries (fresh or frozen), or other fruits like sliced bananas, diced apples, or raisins

Optional Add-ins:

  • 1/4 cup chopped nuts (walnuts, pecans, or almonds)
  • 1/4 cup shredded coconut
  • 1 tablespoon chia seeds or flaxseeds

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish or similar size.
  2. Mix Dry Ingredients: In a large bowl, combine the oats, baking powder, cinnamon, salt, and brown sugar.
  3. Mix Wet Ingredients: In another bowl, whisk together the milk, egg, vanilla extract, and melted coconut oil.
  4. Combine and Add Fruit: Pour the wet ingredients into the dry ingredients and stir to combine. Gently fold in the berries or other fruits.
  5. Bake: Pour the mixture into the prepared baking dish. Spread evenly and add a few extra berries or nuts on top if desired. Bake for 35-40 minutes, or until the top is golden brown and the oatmeal is set.
