1 cup mixed berries (fresh or frozen), or other fruits like sliced bananas, diced apples, or raisins
Optional Add-ins:
1/4 cup chopped nuts (walnuts, pecans, or almonds)
1/4 cup shredded coconut
1 tablespoon chia seeds or flaxseeds
Instructions:
Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish or similar size.
Mix Dry Ingredients: In a large bowl, combine the oats, baking powder, cinnamon, salt, and brown sugar.
Mix Wet Ingredients: In another bowl, whisk together the milk, egg, vanilla extract, and melted coconut oil.
Combine and Add Fruit: Pour the wet ingredients into the dry ingredients and stir to combine. Gently fold in the berries or other fruits.
Bake: Pour the mixture into the prepared baking dish. Spread evenly and add a few extra berries or nuts on top if desired. Bake for 35-40 minutes, or until the top is golden brown and the oatmeal is set.
Serve: Let it cool slightly before serving. Enjoy warm with a drizzle of milk, yogurt, or a bit of honey on top.
Storage:
Store leftovers in the refrigerator for up to 5 days. Reheat individual servings in the microwave, or enjoy it cold.
