Here’s a cozy and versatile Baked Oatmeal recipe that’s great for breakfast and can be prepped ahead for the week!
Ingredients:
- 2 cups old-fashioned rolled oats
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 cup brown sugar or maple syrup (adjust to taste)
- 1 1/2 cups milk (any type: dairy, almond, oat, etc.)
- 1 large egg (or a flax egg for a vegan option)
- 1 teaspoon vanilla extract
- 1/4 cup melted coconut oil or melted butter
- 1 cup mixed berries (fresh or frozen), or other fruits like sliced bananas, diced apples, or raisins
Optional Add-ins:
- 1/4 cup chopped nuts (walnuts, pecans, or almonds)
- 1/4 cup shredded coconut
- 1 tablespoon chia seeds or flaxseeds
Instructions:
- Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish or similar size.
- Mix Dry Ingredients: In a large bowl, combine the oats, baking powder, cinnamon, salt, and brown sugar.
- Mix Wet Ingredients: In another bowl, whisk together the milk, egg, vanilla extract, and melted coconut oil.
- Combine and Add Fruit: Pour the wet ingredients into the dry ingredients and stir to combine. Gently fold in the berries or other fruits.
